I find the summoning skills far from "useless", but whatever.
I did Polymock once to get the skills. Never again. If (like me) you find Polymock frustrating and unpleasant... do yourself a favour and cough up the cash for a Ruby Djinn piece. Then you'll win every match first attempt.
Or, borrow an Iboga piece from a friend/guildmate... not as good as a Ruby Djinn, but will still get you through a lot easier. Once you're done, you'll get a new Iboga piece as quest reward, which you can use to repay the loan.

No incentives to play after you've gotten the EoTN skills. I can find better ways to kill time.

I am going to say that ALL of the solo-quests in Eye of the North are stupid and poorly designed. Nobody does ANY of them for fun. The only reason why most people do them are for the PvE skill rewards.
Nobody gives a crap about the Norn Fighting Tournament anymore. The only reason why the Kilroy Punch-Out thing is played at all is for book-grinding and Survivor title grinding. If the dungeon was changed to give zero XP for punching out enemies, then I bet that dungeon would go empty overnight.
I mean, who really thinks that the best quests are the Great Norn Ale-Moot or Bear Club for Men? Or worse of all, the stupid Cold As Ice quest? If I see any of these kinds of quests in Guild Wars 2, then ArenaNet can kiss one of their customers goodbye.
There is little doubt in my mind that the worst concept in Eye of the North is Polymock. I still cannot believe that ArenaNet spent an incredible amount of time hyping Polymock at trade shows, and they referred to it as "Pokemon on steroids". Personally, if I created a RPG and somebody started comparing any feature in it to Pokemon, then I would say that's an incredible insult.

Any solo quest that allows you to use your own skillset is actually pretty fun.
It's the premade skillsets that make some of them suck.

The points given are insignificant compared with the time and tries it takes.
And since it's solo and has quite a frustrating yet slow pace that depends most only in timing and interruptions, and forces you to be in a little area, I don't think many people finds it enjoyable.
I just merely get the elementals, then it becomes somehow easier, and then get the skills, and finally forget about it.
Ah, and, of course, I do so in days when the lag may be lower, doing them in Sundays when the Internet connections per capita are much higher would be suicidal, 400 ping instead 90 and you are done, no matter how good you are on timing.

Got the skills on all my characters and haven't been back. First time through was interesting, but after they're all the same. Oh, and no need to be fancy and worry about ping. Forget interrupts and dodging. You don't need them. Hit your big damage at the start and then spam the light attack till the big attack recharges. Keep an eye for when they use their interrupt or use you own glyph then hit the big attack again. Spam the block on recharge and the sig when you got no energy. No need to even move. The hardest match is against the 3 elementals (who's actually pretty early on) after that its easy. And when you get your own 3 elementals you can pretty much face roll your way to victory.
The norn tourneys ok, its got some nice variety. Though I wish it had some reward or so. After the skills and the hat, doesn't really offer anything except alco points.

I have played through the full quest chain on 2 characters - that's all.
I found it slightly interesting. It's got a little bit of everything - interrupt-disrupt-buff-debuff-DoT stuff going on, but it's been watered down. Like a weird microcosm of GW skills.
Costume Brawl is more entertaining, and similar idea.
